We know it is not the fall, but winter squashes store very well. Warm up a bowl of our roasted butternut squash soup for lunch today and don’t forget to put a dollop of the smoky chipotle cream on top. In this pureed soup you will discover hints of onion, garlic, celery and carrots, plus butternut squash. All of these veggies are sauteed then simmered in a vegetable broth. Oh, the soup also has a hint of smoke in it too because we add diced chipotle peppers in it before we puree it. Get excited. Soup is on!
