Everyone loves hot wings. So we decided to combine two very cherished dishes; mac and cheese and hot wings. It is pretty amazing too. The mac and cheese start out with shredded chicken cooked in hot sauce, then folded into a spicy béchamel. Next macaroni, cheddar and pepper jack cheese are added. Before the mac and cheese is baked it gets a blue cheese-parsley and panko topping. It is baked until golden brown allowing all the flavors to meld. Just the right amount of kick to this dish. We paired a shaved carrot slaw that has plump raisins, and pineapple chunks, all folded into a mayonnaise base seasoned with curry powder, garlic, celery seed and a hint of sugar. The perfect side for a buffalo chicken mac and cheese.
