Broccoli Shiitake and Red Onion Roast with Sun-Dried Tomato-Mashed Potatoes

Nothing beats roasted broccoli. Well, maybe if you add shiitake mushrooms and red onions. So, we roast this trio of veggies with a bit of balsamic vinegar and olive oil until golden brown and tender. It is then served with a side of mashed potatoes with chopped sun dried tomatoes folded in. A true vegetarian’s delight.
This meal is ready to warm and enjoy.
