Blueberry-Rhubarb Crisp with a Pistachio Crust

What we love about crisps is the tender crispy top and fruit filled base. This blueberry and rhubarb crisp has both those elements. We start off by folding the fresh blueberries in with chopped rhubarb and sugar; then top it with a pistachio, flour, sugar, and butter crumble. The crisp is baked until oozy and golden brown. It has the right proportion of sweetness and cookie crumb; making it pretty much perfect dessert to enjoy in the summer. Be sure to serve it with your favorite ice cream or whipped cream.
