This Mexican inspired salad is a great dish to bring to any cookouts you are attending this weekend. It pairs well with anything coming off the grill. In each spoonful you will fins tender black beans, diced jicama, fresh corn, carrots, cilantro and basil all tossed in a bright lime and orange vinaigrette. This salad also makes a great midafternoon snack. We love the fresh corn and crisp jicama in the citrus vinaigrette.
