This week get ready for a modern salad variation. Diced fennel is combined with raw beets, chopped jicama, shaved Belgium endive and tomatoes then dressed in a macadamia nut dressing. The dressing is made up of lime zest, lime juice, cumin, cayenne and macadamia nuts; all pureed together. The textures in this salad really pop, especially when the creamy macadamia nut dressing is added. This salad pairs well with any of the entrees we have on our menu this week.
