We have a delectable soup and salad combo for to dig into this week. This asian-inspired chopped salad is comprised of a bed of chopped romaine, shredded red cabbage, edamame, diced red pepper, carrots, scallions, mandarin oranges, and toasted almonds; oh and roasted chicken. It is dressed in a fresh ginger dressing made up soy sauce, sriracha, sesame oil, rice wine vinegar and garlic. The salad is paired with an aromatic Thai squash soup. The soup starts out with roasted butternut squash that is then added to chopped onions, minced garlic and ginger. This is then seasoned with red curry paste and brown sugar. Next chicken stock and coconut milk; and the soup is brought to a simmer. There are so many layers of flavor to this delicious soup. Garnish with the sautéed shrimp, toasted coconut, cilantro and lime. What an amazing duo!
