This salad is not only bursting with color, but with flavor too. A bed of arugula and sliced endive is lightly dressed in a fresh and vibrant vinaigrette made up of  fresh ginger, jalapeno, turmeric, garlic, cilantro, lime juice, lime zest and olive oil, The salad is then garnished with kernels of corn, sliced yellow bell pepper, and cherry tomatoes. Yum. We love all the crunch and zip to this salad. It pairs well with any of the entrees we have on the menu this week and makes for an ideal snack on its own. You decide. Enjoy.
