The fall will be here soon enough and here is an early preview of dishes to come. Pork chops are glazed with a fresh apricot and sage sauce sliced and served with garlic roasted potatoes. The chops are both marinated and glazed in the same apricot sauce. The sauce has minced shallot, fresh apricots, brown sugar, soy sauce and sage; this all simmers until the sauce can coat the back of a spoon. Pork chops are one of our favorite items to prepare and they are pretty delicious especially with this apricot sage glaze.
