Ok, this salad sounds a bit out there, but it is delicious. Inside this salad you will find roasted cubes of sweet potatoes and red skin potatoes, sautéed green okra, capers and spinach; all combined in a cabernet vinaigrette. Really this salad is more filling and acts like a hearty side dish. You can’t resist the sweet potato and okra combination here. It is so southern.
