Change up your soup game with our creamy zucchini and cilantro soup. The soup starts out with chopped zucchini, sliced leeks, poblano pepper, and garlic all being sauteed until golden. Next we add a house-made chicken stock, parmesan cheese and a bunch of cilantro to the soup and allow it to come to a simmer. Once the zucchini is tender, the soup is pureed and then finished with crème fraiche. This zucchini soup is creamy and is zesty. The cilantro adds a peppery note to the soup that make it quite unique.  Trust us, you will crave this soup after finishing one bowl.
