Change up your typical taco Tuesday meal with this turkey enchilada casserole. It is rich, cheesy, layered and filled with turkey goodness. Ground turkey is sautéed with chopped onion, minced garlic, toasted cumin, oregano, and red enchilada sauce. The turkey enchilada mixture is layered with toasted corn tortillas and shredded Monterey jack cheese; then the casserole is baked until golden brown. We love the rich earthiness of the red enchilada sauce combined with the creaminess of the melted cheese. It goes perfectly with the side of butter sautéed sweet corn and zucchini.
