This week we have a Mexican-inspired grain salad. Tender quinoa holds chopped kale, cooked black beans, chopped cilantro, sliced sun dried tomatoes, crumbled feta, minced jalapeno, and pepitas. The salad is then dressed in a cumin-lime vinaigrette. Each bite is jam packed with fresh flavor. This salad can be enjoyed on its own as a snack or paired with any of our entrees.
