Jazz up your week with this Asian-inspired chicken soba noodle meal. A tender chicken breast is roasted and sliced then folded in with sliced carrots, green onions and Japanese soba noodles. The noodles are then tossed in a spicy peanut sauce made up of peanut butter, fresh ginger, soy sauce, honey, red pepper flakes, and garlic. Each bite is creamy, nutty and has a small kick to it. Nothing too spicy, but just the right amount. Garnish the soba noodles and chicken with roasted peanuts and serve along side the tender crisp sesame broccoli. This is an ideal summer meal.
