It is taco Tuesday time! Tonight get excited for our grilled chicken and vegetable tacos. The chicken breasts are seasoned with smoked paprika, brown sugar, chili powder, onion powder and garlic powder. The chicken is grilled alongside zucchini and red bell pepper. Assemble your tacos in corn tortillas and top with chipotle sour cream and cilantro slaw. That slaw is made up of shredded cabbage, carrots, red cabbage, cilantro and lime juice. The tacos are served with a side of smoky fiesta beans. In each spoonful of the beans you can find pinto beans, bell pepper, onion and garlic; all seasoned with cumin, chili powder and smoky ham hock. All things one needs to celebrate a taco Tuesday.
