Warm up tonight with a bowl of our spaghetti squash soup. It is surprisingly hearty for a meatless soup. We start off by roasting a spaghetti squash then as that is roasting a medley of seasonal mushroom are butter sautéed with minced onion, garlic and sage. Once the onion are golden vegetable stock is poured in and the soup is seasoned with parmesan cheese. Lastly ditalini pasta joins the simmering soup. Serve the soup a top a portion of the roasted spaghetti squash and enjoy.
