Spice up your mealtime time with this 16 spice rubbed chicken. This roasted chicken is not short on spice or aromatics. Each piece of chicken is seasoned with a spice mixture made up of ancho powder, pasilla powder, cumin, coriander, ginger, garlic, onion, allspice, cinnamon, cloves, fennel seeds, cayenne, black pepper, salt, arbol, and brown sugar. The chicken is oven roasted until golden brown and served with a black pepper vinegar sauce. The mustard sauce has honey, rice wine vinegar, Dijon and olive oil. The chicken comes with two side salads. One is the tangy scallion slaw made with mayonnaise, red cabbage, honey, red onion, poppy seeds, and green onions. The other is the creamy Indian-inspired basmati rice salad with cauliflower and potatoes. The two vegetables are sautéed with onions, raisins, garlic and fresh ginger; then seasoned with cumin, coriander, cloves and dried mustard. The rice and the sautéed vegetables are then dressed in a cider vinegar and yogurt sauce; then garnished with cilantro. Each bite is packed with spice, creaminess, rice, tender potatoes and cauliflower. What an aromatic meal! There are a lot of flavors here, but it will surely fill you up for dinner.
