Tonight enjoy a pave of salmon roasted with fennel and Pernod. Rich flaky salmon with the essence of anise, the predominant flavor of both fennel and Pernod. This meal is perfect to snuggle up to the fire and watch the bowl games. To keep it simple we added a side of sautéed baby spinach. A light meal ideal for any night this week. Yum!
