A modern southern-influenced potato salad is on the menu this week. We took a typical potato salad and turned it on its head. It starts out with roasted sweet potatoes that are diced and then combined with a cranberry honey chipotle sauce. You are not short on tang, heat, or sweetness with this salad. Next pumpkin seeds, sliced scallion and chopped cilantro are folded into the sweet potato salad. This adds freshness and crunch. Serve this salad with any food coming out of your grill or smoker.
