This is the perfect spring dessert. Nothing can top an upside down rhubarb cake made from scratch. Fresh spring rhubarb is mixed with sugar and lemon zest; then placed in a cake pan. Next a brown sugar and sour cream cake batter is poured over the rhubarb, then baked to perfection. The most exciting moment of this cake, is turning it out to see the bottom rhubarb become the top of the cake. Sweet, sour, rich and moist are all great words that describe this spring cake.
