One of our favorite fish dishes is this potato crusted tilapia entrée. Here we thinly slice potatoes and “scale” them over the fillet of seasoned tilapia. We roast the tilapia then garnish it with a brightly flavored chive and rosemary oil. A perfect balance between the two components. To accompany the tilapia we paired roasted sugar snap peas sprinkled with fresh chives. A very appropriate early winter dinner keeping with your new year’s resolution.
