We pan sauté pork medallions until golden brown then start the gravy by cooking the shallots in the same pan with the sliced creminis and a sprig of rosemary Once the mushrooms are browned, flour is added and homemade chicken stock is whisked in. The gravy begins to thicken, the pork is added back to the gravy. Serve the pork medallions and mushroom gravy over tender egg noodles.
