This poblano potato salad is a tad smoky and has a hint of spice to it. It is most definitely a twist on a summer salad classic. We fire roast poblano peppers, then fold them into a sour cream, lime, and cilantro. Tender sliced baby redskin potatoes and chopped tomatillos are added to the salad. This potato salad has tons of flavor and a lot of personality. A great addition to accompany your grilling projects this week.
