Keep it fresh and a touch exotic this week with our Moroccan-style carrot and chickpea salad. The salad is made up of grated carrots, dried currants, toasted almonds, torn mint, tender chickpeas, and minced shallots. It is then dressed in a Moroccan-citrus-honey vinaigrette that is seasoned with cumin, ginger, coriander, allspice and a touch of cayenne. We love the carrots paired with almonds and creamy chickpeas; and the dressing really brings the whole salad together. Yo can enjoy the salad on its own as a snack or pair it with any other meal we have on the menu this week.
