Crunchy, bright, creamy and light are all adjectives that can best describe this salad. What we love the most about this mixed green salad is the jicama and avocado; crispy and creamy. This salad is dressed in a pomegranate vinaigrette and garnished with toasted pine nuts. If you want to make this salad more filling, we suggest grilling off some shrimp or slice of salmon to go along with it.
