Caesar salad is a classic. Here, we take it and made it a lot brighter with the lemon and red wine vinegar. The salad dressing starts out with the same base of minced garlic, mashed anchovy, olive oil and egg yolk. This is then seasoned with Dijon mustard, lemon juice, lemon zest and red wine vinegar. This seasoning makes the dressing very bright and delicious, you are not short on any lemon. Serve with chopped romaine, grated parmesan cheese and crunch croutons. Perfect for any dinner or lunch.
