Korean-Style Chicken Meatballs with Pickled Cucumbers with Kimchi Rice

These Korean-inspired chicken meatballs will spice up your typical menu selection. There is the right amount of sweet and heat to them; they will totally surprise you. Ground chicken is mixed with minced ginger, garlic, brown sugar and soy sauce. The meatballs are sautéed then glazed with a bulgolgi-esque sauce made up of soy sauce, brown sugar, garlic and Korean chili paste. Serve the meatballs with our house pickled sweet and tangy cucumbers and kimchi rice. You will be craving this dish for weeks once you have had it. Chopsticks are optional. Yum!
