Get excited for this kale and apple salad. Chopped kale is folded in with sliced apples and shredded cheddar cheese then dressed in a light cider vinaigrette. Our cider vinaigrette is made up of Dijon mustard, sugar, olive oil and apple cider vinegar. Slightly tart, but pairs well with the fresh apple slices and shredded cheddar. This salad makes for a great light lunch at work.
