We love firing up the grill. The summer would not be the summer if you didn’t. Instead of grilling a steak, try this halibut dish. The halibut is lightly seasoned with toasted ground cumin and coriander, then grilled and served with roasted red pepper harissa. Our harissa is a puree of roasted red pepper, minced garlic, charred jalapeno, cumin, coriander, and lemon juice. To go along with the flakey white grilled halibut we paired tender crisp green beans and carrots tossed in charmoula. Our Moroccan-inspired charmoula is a mixture of minced garlic, cilantro, parsley, cumin, paprika, lemon juice and olive oil. These two dishes will make you think you are on the streets of Marrakesh. Enjoy.
