Do not over look this salad, it is heartier than you think. Shaved napa cabbage joins grilled sweet potato, sliced onions, chopped cilantro and scallions in this salad. It is then tossed in a fresh lime vinaigrette made up of honey, minced jalapeno, and olive oil. The salad is garnished with toasted pumpkin seeds, which adds some crunch. We totally love the grilled sweet potatoes in this salad and we hope you do too.
