Dijon and Cognac Beef Stew with Endive, Escarole, Apples and Cider Vinaigrette

Craving comfort food? We have one rich and comforting stew for you to savor on a chilly winter’s day. The stew starts out with sautéed salt pork, onions, and shallots; then the beef stew meat is seared. Next the beef and the onions are deglazed with cognac, creating the base for this complex in flavor meal. Beef stock is added and the stew is seasoned with dijon mustard before the stew comes a simmer. Once the beef is fork tender we add sliced carrots, diced mushrooms and a touch of red wine. Yum. Serve the stew with a slice of crunchy french bread. The flavors alone will knock you our of your seat. We paired the stew with a winter friendly endive salad comprised of sliced escarole, apples and a cider vinaigrette. The ideal pair for a winter’s dinner.
