Keep it light and refreshing this week with our tropical crab salad. Tender chunks of lump crab meat are combined with sliced mango, avocado and shaved red onion; placed in lettuce cup and then lightly dressed with a citrus vinaigrette. This dressing is made up of lime juice, orange juice, olive oil and honey. So, it is very bright and fresh. We love the sweet mango and creamy avocado. The addition of our Caribbean cornbread makes this light meal outstanding. Our secret is adding some pineapple to the cornbread along with some Monterrey Jack cheese. This is a very patio worthy meal.
