Challenge taco Tuesday to become a tostada Tuesday.  A toasted flour tortilla holds shredded chicken breast sautéed with fresh corn, diced zucchini, and onion; seasoned with toasted cumin, cilantro and garlic. The tostadas are topped with Monterrey jack cheese and baked until the cheese melts. Garnish with your favorite salsa, sour cream or guacamole. We paired these tostadas with our delicious Texas-style kale and quinoa salad with cumin-lime dressing.
