Another great taco Tuesday alternative! Chicken and black bean enchiladas smothered in our housemade red enchilada sauce and then topped with more cheese and baked. The black bean and chicken filling has sautéed onions, garlic, bell peppers, bacon and enchilada sauce; plus more cheese. These enchiladas are served with garlic roasted acorn squash with apples and leeks. We decided to add a bit of Michigan flavor to this meal by using Michigan apples for the acorn mash. So delicious! This is a very festive meal celebrating the fall season. Plus it keeps you warm.
