We just love all of the fresh corn that is coming into our kitchen. There is nothing better then a hearty bowl of corn chowder. In this variation we cheese it up with cheddar. The chowder starts off with bacon being rendered off, then onions are sautéed in the bacon grease. Next the fresh corn kernels are added and a touch of flour for thickening. Home made chicken stock seasoned with turmeric is poured in and the soup begins to simmer and thicken. Lastly diced potatoes are added; once tender the chowder is light pureed and finished with cheddar cheese and half and half. Serve the chowder hot and garnish with the bacon. Bring your own oyster crackers to this chowder party.
