The winter is not quite winter without a bowl of hearty cheddar cauliflower soup. Here we start out by sautéing leeks in butter then we add fresh cauliflower. As this sautés we add cream and milk; and bring to a simmer until the cauliflower is tender. Lastly we fold in the shredded cheddar cheese and season accordingly. This soup is creamy, cheesy and packed with cauliflower goodness. Enjoy a bowl with a slice of crusty Italian bread.
