Keep lunch simple this week and order this Italian inspired salad.  Crispy pieces of pancetta, chunks of ricotta salata and crispy fresh pear all sit on a bed of fresh arugula. This is then all dressed in a sweet yet tangy champagne honey vinaigrette. We love the meat slices of pancetta aka Italian bacon in this salad. There is so much flavor and texture going here. Enjoy!
