Don’t look over this Italian-inspired salad. It is fresh, tangy and delectable. This salad is made up of sliced fennel, artichoke hearts, grated parmesan and minced parsley. It is then dressed in a lemon vinaigrette comprised of lemon juice, dijon, minced garlic, red pepper flakes and olive oil.
