This week we have another soup highlighting the bounty of summer. This silky zucchini soup simple and totally delicious. It starts off with sliced baby zucchini sautéed in butter with chopped onions and garlic, until tender. Next vegetable stock is added and the soup comes to a simmer, allowing the flavors to meld. Lastly, the zucchini soup is pureed until smooth. Super simple. You can enjoy this soup warm or cold.
