It is chestnut season and we are utilizing them more in many of our dishes. We absolutely love this soup. Slow roasted carrots are sautéed with shallots and chestnuts, then seasoned with allspice and ginger. Next we add our house-made chicken stock and allow the soup to simmer. Once the carrots and chestnuts are tender the soup is pureed. Garnish this soup with a dollop of the parsley cream; it adds an extra richness to the soup. Yum.
