Here is a winter inspired salad. Tender mixed greens are garnished with diced pancetta, dried cherries and toasted pine nuts; then dressed in a tangy port cabernet vinaigrette. This salad is then topped with a warmed slice of goat cheese.  We love all of the different flavors in this salad. The salty pancetta, sweet tart cherries and creamy goat cheese. Just a whole bunch of yum. Another great choice, if you are looking for a light, but filling lunch.
