Barbecue Pork-Fried Rice with Jalapeno-Ginger Butternut Squash Soup with Creme Fraiche

This pork fried rice is better then takeout. Chinese spiced pork tenderloin is roasted and sliced, then folded into our flash fried rice. The pork is seasoned with oyster sauce, soy sauce, Chinese five spice, garlic and tomatoes before it is roasted. The sliced pork is then sautéed with snow peas, onion, cabbage, red pepper, ginger and rice until the flavors meld. Plus the traditional scrambled egg. The fried rice is then seasoned with a soy sauce and chicken stock mixture. Serve the fried rice piping hot with the side of jalapeno ginger butternut squash soup. This soup has a little kick to it, but is so luscious and delicious. We start off by sautéing garlic with ginger and jalapeno until fragrant. Next the diced butternut squash and chicken stock as added. Once the soup comes to a simmer and the squash is tender, it is seasoned with cayenne pepper and brown sugar; then pureed until smooth. Serve the squash soup hot with a dollop of creme fraiche. This sounds like a lot of food, well enough for one large meal or for two smaller ones.
